
Dejan Parun is from a small island in Dalmatia – Prvic Luka. Born in 1991 and coming from a mixed marriage between one Serbian and one Croatian parent – while the war between these two countries was about to start – the family was forced to move and find a new home. Which they did, in Novi Sad, Serbia.

Growing up, Dejan was lucky that both of his grandmas were exceptional cooks, and from his earliest childhood the best memories were from spending all his free time in the kitchen with them and exploring new tastes. Serbian traditional cuisine and Dalmatian way of preparing seafood left a great mark on Dejan’s own culinary techniques which he was above happy to use in his restaurant.
He started working as a pizza chef from a really young age and was always motivated to learn and do more. All the money he made from that job, he saved and years later he was finally able to open his own restaurant – Tramontana. The place became the synonym for a great pizza, not just in Novi Sad, but in Serbia and wider. It started to attract guests from the whole region and the reviews were amazing. Dejan’s long awaited childhood dream came true. To this day, Dejan and his whole team of great pizza chefs are still learning, exploring and going forward.
