As a result of this legacy, Fortunato is also an ambassador for the Pizza Tramonti Association in Italy and abroad.

Born in Lodi in 1973, Fortunato grew up in the family pizzeria “La Luna,” founded by his parents in 1968. From a young age, he learned the art of dough, natural fermentation, and the importance of honest, high-quality ingredients. Summers spent in Tramonti deepened his connection to his roots and shaped his culinary vision.

In his twenties, he left university to travel the world—working and learning in cities like New York, Miami, Paris, and Shanghai. These international experiences, combined with his family traditions, eventually led to the founding of Anima Romita in 2017.

Today, Anima Romita is a contemporary pizzeria that blends refined doughs, seasonal toppings, and curated drink pairings. With a strong focus on ingredients, technique, and territory, Fortunato brings his personal values to every plate—offering guests a unique and thoughtful experience centered around pizza culture.
