Although born in the south, he moved to the Modena area at just four years old, growing up in a cultural intersection between Campania and Emilia-Romagna. This dual heritage deeply influences his work and personality—equally at home with dishes like pastiera and parmigiana as with tagliatelle and lasagna.
His path to pizza wasn’t immediate. Born in 1985, Gianni worked in the car industry until his mid-20s. Inspired by his father’s dream of opening a pizzeria, he shifted careers and traveled to Sorrento to study traditional Neapolitan pizza under Antonino Esposito. Back in Maranello—famous for its Ferrari legacy—he launched La Bufala, starting as a small takeaway spot that gradually grew into a respected destination for pizza lovers.
Gianni’s culinary philosophy is grounded in authenticity and personal expression. Today, he aims to reflect his own values through his cooking, emphasizing a stronger connection with the Modena Apennines and working closely with local producers. His dough draws from the Neapolitan tradition but is adapted to his style: thicker, more digestible, and evolving toward natural fermentation. He’s also exploring a project to use exclusively local Emilian flours.
The updated La Bufala pizzeria, reopening with a fresh look, will feature new appetizers, fried offerings, and house-made freselle crafted from bread dough leftovers. Gianni also plans to enhance the beverage selection, including lesser-known Champagne producers, regional wines like Lambrusco, and artisanal liqueurs such as mirtillino from the Apennines. His curiosity has even led him to discover unique gins and mezcals, bringing international flair into a deeply rooted local context.
Equally important to Gianni is his connection with high-end cuisine. Collaborations with chefs—including those from renowned restaurants—have inspired creations that blur the lines between pizza and gourmet cooking. One such example is his “lasagna pizza,” a nod to Italian comfort food with thoughtful textures and flavors.
His openness to new ideas comes from years of travel, during which he explored different cultures, ingredients, and techniques. These experiences have broadened his culinary perspective, fueling constant experimentation and growth.
Despite his dedication to his craft, Gianni values balance. He makes a point to prioritize his family and personal life, believing that fulfillment outside of work enhances his creativity in the kitchen.
