
After nearly a decade of experience in Singapore, where he trained under renowned chefs like Nancy Silverton at Mozza and Daniel Boulud at DB Bistro, Jonathan returned to the Philippines to bring his expertise to a wider audience.
He currently leads the kitchens at A Mano, one of Metro Manila’s most respected Italian restaurants, working alongside founder Amado Forés. As head of research and development at AF Hospitality, Jonathan focuses on transforming simple ingredients into refined dishes, blending international techniques with Filipino soul.
Redoblado’s commitment to quality, creativity, and authenticity has earned him recognition on the global stage. In 2023, he was named one of the top 100 pizza chefs in the world, securing the 90th spot in The Best Pizza awards.
