While earning her degree, a study abroad experience in Italy deepened her appreciation for food and culture. After graduation, Laura joined Tony’s Pizza Napoletana in San Francisco, eventually becoming kitchen manager.

In 2013, Laura made history at her first international competition in Parma, Italy, where she became the first woman and first American to win in the Pizza in Teglia category—recognized among the best pizzas in the world.

For over a decade, she taught at Tony’s International School of Pizza, mentoring chefs and operators while developing a passion for teaching and writing for Pizza Today magazine. During the pandemic, Laura launched her own project, Focaccia da Laura, which led to the opening of Pizzeria da Laura in Berkeley in 2023.

She has since expanded with The Mercatino, a specialty market offering curated goods, local wine and beer, and house-made items. Laura continues to push pizza forward with heart, heritage, and bold creativity.
