Starting as a dishwasher and later as a pizza assistant in local establishments, he quickly became passionate about the craft. In 2010, he opened his first pizzeria, 'Torrebianca,’ in Torralba, a small village in Sardinia. This five-year experience allowed him to experiment with dough and explore the world of leavened products.

In 2015, driven by a desire for new challenges and inspiration, Sandro traveled both across Italy and abroad, studying pizza techniques and tasting from renowned pizzaiolos. His journey led to the creation of his unique concept in 2017: RE | MI, based in Sassari. Sandro’s approach blends contemporary pizza with a focus on seasonal ingredients and various doughs, offering an innovative tasting experience. RE | MI is not just a pizzeria, but a place to discover new flavors and explore different ways of crafting pizza.
