In 2023, he made a bold move to Los Angeles, opening Bar Monette in Santa Monica — a cozy, design-forward wine bar just blocks from the beach. The restaurant, named after his wife, reflects Sean’s desire to create a welcoming space where fine dining meets comfort and community.
Blending Victorian and modern aesthetics, Bar Monette serves a dynamic menu of tapas-style small plates, luxury bar snacks, and beautifully blistered Neapolitan-style pizzas topped with ingredients like truffle, caviar, and Dungeness crab.
For Sean, pizza is more than comfort food — it’s a creative canvas. His signature pies combine a puffy, leopard-spotted crust with unexpected fine-dining flair. Think raclette and Comté, spicy soppressata with honey, or a Margherita made with the precision of a tasting menu dish.
Today, Sean lives in LA with his wife and continues to push boundaries in both design and flavor. With more projects on the horizon, Bar Monette is only the beginning of his California chapter.
