
Born into a family where food was a cornerstone of daily life, Seba’s love for the kitchen began early. With a father, Sammy, deeply rooted in the restaurant business, and a nonna who crafted unforgettable Italian dishes, food was always at the heart of home and heritage.

Between soccer and family meals, Seba developed a genuine passion for cooking—one nurtured by nightly sessions in the kitchen alongside his loved ones.
Initially, Seba followed a different path, earning a full soccer scholarship in Texas. But after a series of injuries, he returned home to Toronto, where he explored the restaurant world before moving into a career as a financial advisor. Despite professional success, something was missing—and Seba eventually chose to return to what truly fulfilled him: food.
That calling led to “Che,” Toronto’s first Argentinian food truck, followed by “AMA,” a beloved Italian-Argentinian supper club known for its sense of community and dishes made with heart.
In 2020, Seba and his wife made a bold move to Costa Rica with their newborn son, four suitcases, and a dream. They planted over 200 fruit trees, built an off-grid farm in Uvita, and in time, opened Seba’s—a farm-to-table fine dining experience focused on sustainability, seasonality, and supporting local producers.
