Though initially trained in urban planning, it was the kitchen that ultimately claimed his heart and career.

Motivated by a deep passion for pizza and a desire to evolve, Carmine immersed himself in advanced training, learning from master pizzaioli in Italy and abroad. His work reflects a careful blend of technique and creativity, always rooted in quality ingredients and respect for Italian tradition.

In 2014, Carmine moved to Colombia, where he and his wife founded Fortezza, an innovative brand of frozen pizzas baked in a wood-fired oven — uniting artisanal quality with scalable production. The success of Fortezza led to the creation of Pizzeria Fortezza, now considered one of the best contemporary pizzerias in the country.

Visionary and proudly connected to his roots, Carmine continues to share Italian culinary excellence through Fortezza — a dynamic hub of flavor, culture, and creativity that’s making a lasting mark on global dining.
