One of his earliest lessons came during summer mornings at the market with his grandmother: “Great cooking begins with choosing great ingredients.” When tomatoes were in season, she’d remind him to check lou pécou—the stem in Provençal dialect—because only the ripest would do.

That deep respect for ingredient quality became the soul of Lou Pécou, Cédric’s pizzeria and personal philosophy. As a Master Artisan Pizzaiolo, he blends time-honoured traditions with a forward-thinking approach. His dough is made with a mix of 100% organic flours and naturally leavened; every topping—from local vegetables to cured meats—is selected for its integrity and prepared in-house.

Cédric’s work is rooted in sustainability and authenticity. He adapts his craft to meet the demands of today’s changing food systems, always driven by a simple belief: a great pizza needs nothing more than honest ingredients and sincere care.

„My promise,” he says, „is to always grow, so I can offer you pizza made with purpose.”
