While the fourth generation has already arrived, it’s still a little early for them to step into the kitchen. The two brothers have never turned away from their heritage — instead, they’ve chosen to refine and evolve it with care and intention.

Their focus has been on perfecting the dough through meticulous research into flours, hydration levels, and fermentation times, resulting in a light, digestible base that stays true to the Neapolitan style. This pursuit of excellence has recently led to the expansion of their existing location — a space that blends modern simplicity with authenticity. Equipped with traditional ovens and fryers, the new venue reflects Francesco and Salvatore’s belief in offering outstanding pizza and fried specialties rooted in Naples’ culinary tradition.

They actively collaborate with local producers and support initiatives like the Slow Food Presidia and local food communities, such as those dedicated to preserving native varieties like the underground potato of the Taburno area.
