In 2015, Javier opened his first restaurant, Alter, which quickly made waves in the culinary scene. After selling Alter in 2017, he went on to launch Palmar, further cementing his reputation for creating memorable dining experiences. Alongside these ventures, Javier partnered with renowned pastry chef Antonio Bachour to open a flagship restaurant, showcasing his versatility and commitment to excellence.
Over time, Javier’s passion shifted towards sourdough pizza, sparking countless backyard pizza parties with friends and family. This love culminated in the opening of La Natural in 2020, a pizzeria that has since become known for its authentic, artisanal pizzas made from a unique dough recipe developed by Javier himself. La Natural has been honoured at The Best Pizza Awards, reflecting Javier’s dedication to perfecting the craft.
In addition to his own restaurants, Javier has provided consulting expertise to other notable establishments in Miami, helping them elevate their culinary offerings and achieve recognition in prestigious circles.
