As the chef of Mirazur in Menton, France, Colagreco offers a cuisine that is instinctive, generous, and deeply respectful of the environment. He champions circular gastronomy, valuing short food chains and the natural ecosystems surrounding his kitchen.
Since settling in Menton in 2006, Colagreco has developed Mirazur into more than just a restaurant — it is a 5-hectare domain embodying a philosophy of harmony with nature. His evolving cuisine centers around vegetables but is not strictly vegetarian, following the seasons and lunar cycles.
In 2020, Mirazur became the first restaurant to earn the demanding „Plastic-Free” certification, a testament to years of effort to eliminate single-use plastics. This commitment to sustainability led to UNESCO appointing Colagreco as Goodwill Ambassador for Biodiversity in 2022.
Today, Mauro leads several international restaurants, sharing his deep convictions and continuing to innovate with the environment at the heart of his creations. He was recognized with The Best Chef and The Best Pizza titles, reflecting his status as a leading figure in modern gastronomy.
