
Born in 1987, Pier Daniele Seu discovered his passion for pizza at 23, teaching himself the craft and starting with classic Roman-style recipes.

He gained experience across various pizzerias in Rome, quickly drawing the attention of food critics and building a loyal following.
In 2016, he was recognised as Best Emerging Young Pizza Chef by Luigi Cremona’s Witaly. A year later, he was invited by Umberto Montano to lead Bottega della Pizza at Mercato Centrale Roma, where he remained until 2022.
In 2018, together with his wife Valeria Zuppardo, he founded Seu Pizza Illuminati — a refined, design-driven pizzeria that challenges traditional norms while offering a premium dining experience.
In January 2024, they launched their second concept, TAC – Thin & Crunchy, in Mostacciano, focusing on Roman-style pizza in a contemporary format.
Pier Daniele is known for his chef-like approach, relentless experimentation with doughs, and use of plant-based and fusion ingredients. His mission is to push pizza beyond its typical boundaries.
