
Tsubasa Tamaki, born in Okinawa, Japan, is a celebrated self-taught pizza chef known for his distinctive take on Neapolitan-style pizza.

Originally aspiring to be an architect like his mother, Tamaki discovered his passion for pizza while working part-time at a Tokyo restaurant. He honed his skills at renowned pizzerias such as Savoy and Pizza Strada, mastering the craft without ever visiting Italy.
In 2018, Tamaki founded Pizza Studio Tamaki (PST) in Tokyo’s Roppongi district. His pizzas are crafted using a unique blend of Japanese and American flours, fermented for 30 hours, and baked at 480°C in a custom-built oven. One of his signature techniques includes adding Japanese cedar shavings to the fire, infusing the crust with a subtle smokiness.
Tamaki’s minimalist philosophy emphasises simplicity, balance, and precision. His innovation and dedication earned him recognition from The Best Pizza, awarding PST the Best Pizza Experience in 2024. Expanding internationally, he opened a PST branch in Bangkok in early 2025, with another planned for Singapore in June 2025, further cementing his influence on the global pizza scene.
